Ingredients

  • 3 sliced Walla Walla onions
  • 1/4 c. chopped green pepper
  • 1 c. Swiss cheese, grated
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/4 c. butter
  • 2 Tbsp. chopped pimento
  • 1 c. crushed cracker crumbs
  • 3/4 c. milk or cream
  • dash of pepper

Method

  • Melt butter in skillet; saute onions and green pepper.
  • Stir in pimento; spread half of mixture in an 8 x 8-inch baking dish. Sprinkle with half of the cheese and crumbs.
  • Repeat layers of onions and cheese.
  • Beat eggs and cream; add salt and pepper and pour over onions.
  • Top with remaining cracker crumbs and bake at 350° for 25 minutes or
  • until set.
