Ingredients
- 22 saltine crackers
- 1 egg
- 1 c. milk
- 1/2 tsp. minced diced onion
- 1/4 tsp. salt
- dash of pepper
- 1 (17 oz.) can cream-style corn
- 1 Tbsp. butter or oleo
Method
- Put crackers in plastic bag.
- Close bag; crush crackers with rolling pin.
- In casserole dish, beat egg with fork.
- Stir in milk, onion, salt and pepper.
- Measure 2/3 cup cracker crumbs; add to milk mixture.
- Add corn and stir.
- Put rest of crumbs into small bowl.
- Put butter into skillet on low heat.
- Heat until butter melts.
- Pour over crumbs in bowl.
- Stir to mix.
- Sprinkle crumbs over corn mixture.
- Put in 350° oven for 1 hour or until knife inserted comes out clean.
- Makes 6 servings.
