Ingredients

  • 22 saltine crackers
  • 1 egg
  • 1 c. milk
  • 1/2 tsp. minced diced onion
  • 1/4 tsp. salt
  • dash of pepper
  • 1 (17 oz.) can cream-style corn
  • 1 Tbsp. butter or oleo

Method

  • Put crackers in plastic bag.
  • Close bag; crush crackers with rolling pin.
  • In casserole dish, beat egg with fork.
  • Stir in milk, onion, salt and pepper.
  • Measure 2/3 cup cracker crumbs; add to milk mixture.
  • Add corn and stir.
  • Put rest of crumbs into small bowl.
  • Put butter into skillet on low heat.
  • Heat until butter melts.
  • Pour over crumbs in bowl.
  • Stir to mix.
  • Sprinkle crumbs over corn mixture.
  • Put in 350° oven for 1 hour or until knife inserted comes out clean.
  • Makes 6 servings.
