Ingredients

  • 1 cup grated cheddar
  • 14 tbsp butter, chopped
  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 2 tbsp grated parmesan
  • 2 tbsp milk
  • None None poppy and sesame seeds, to decorate

Method

  • Preheat oven to 350°F. Line 2 trays with baking paper.
  • Place cheddar and butter in a food processor. Process until well combined. Sift together flour, salt and paprika. Add to cheddar mixture with parmesan. Process until almost combined. Transfer dough to a floured surface and bring together with hands. Knead until smooth.
  • Divide dough in half and wrap in plastic wrap. Chill for 20 mins.
  • Lightly flour a work surface. Roll out dough until 5mm thick. Using animal-shaped cutters, cut out shapes and place on prepared trays. Repeat with remaining dough. Brush with a little milk and sprinkle with seeds. Bake for 10-12 mins, until golden. Cool and store in an airtight container until ready to serve.
