Ingredients
- 1 cup grated cheddar
- 14 tbsp butter, chopped
- 1 1/4 cups all purpose flour
- 1/2 tsp salt
- 1/2 tsp paprika
- 2 tbsp grated parmesan
- 2 tbsp milk
- None None poppy and sesame seeds, to decorate
Method
- Preheat oven to 350°F. Line 2 trays with baking paper.
- Place cheddar and butter in a food processor. Process until well combined. Sift together flour, salt and paprika. Add to cheddar mixture with parmesan. Process until almost combined. Transfer dough to a floured surface and bring together with hands. Knead until smooth.
- Divide dough in half and wrap in plastic wrap. Chill for 20 mins.
- Lightly flour a work surface. Roll out dough until 5mm thick. Using animal-shaped cutters, cut out shapes and place on prepared trays. Repeat with remaining dough. Brush with a little milk and sprinkle with seeds. Bake for 10-12 mins, until golden. Cool and store in an airtight container until ready to serve.
