Ingredients

  • 3 eggs
  • 1 c. salad oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. coarse grated zucchini (unpeeled)
  • 1 (8 1/2 oz.) can crushed pineapple, drained
  • 3 c. flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 c. chopped nuts
  • 1 c. currants or raisins

Method

  • Beat eggs, oil, sugar and vanilla.
  • Continue beating until foamy, adding zucchini and pineapple.
  • Combine flour, soda, salt, baking powder, nuts and currants; stir into above mixture until blended.
  • Divide loaves.
  • Bake in greased and floured pans at 350° for 1 hour.
  • Cool and turn out.
