- 3 eggs
- 1 c. salad oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. coarse grated zucchini (unpeeled)
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 3 c. flour
- 2 tsp. soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 c. chopped nuts
- 1 c. currants or raisins
Method
- Beat eggs, oil, sugar and vanilla.
- Continue beating until foamy, adding zucchini and pineapple.
- Combine flour, soda, salt, baking powder, nuts and currants; stir into above mixture until blended.
- Divide loaves.
- Bake in greased and floured pans at 350° for 1 hour.
- Cool and turn out.
