Ingredients
- 2 large limes
- 3 tablespoons unsalted butter, room temp
- 1 1/2 tablespoons Asian sweet chili sauce
- 1 tablespoon minced green onion
- 12 sea scallops, patted dry, muscle removed
Method
- Finely grated 2 teaspoons of lime peel. Cut one lime into wedges & reserve
- Mix butter, chili sauce, green onion and lime peel in small bowl. Salt & pepper
- Sprinkle scallops with salt & pepper. Melt 1 tablespoon butter in large non-stick skillet over medium-high heat. Add scallops and cook 2-3 minutes/side.
