Ingredients

  • 2 large limes
  • 3 tablespoons unsalted butter, room temp
  • 1 1/2 tablespoons Asian sweet chili sauce
  • 1 tablespoon minced green onion
  • 12 sea scallops, patted dry, muscle removed

Method

  • Finely grated 2 teaspoons of lime peel. Cut one lime into wedges & reserve
  • Mix butter, chili sauce, green onion and lime peel in small bowl. Salt & pepper
  • Sprinkle scallops with salt & pepper. Melt 1 tablespoon butter in large non-stick skillet over medium-high heat. Add scallops and cook 2-3 minutes/side.
