Ingredients

  • 1 doz. eggs
  • 8 slices white bread, diced
  • 1 lb. loose sausage (mild)
  • 1 large onion, diced
  • 1 tsp. dry mustard
  • 1 Tbsp. Dijon mustard
  • 3 c. milk
  • 2 c. Cheddar cheese, shredded
  • sage, basil and oregano

Method

  • Saute sausage, onion and fresh herbs.
  • Mix eggs, milk and mustards.
  • Place bread cubes on bottom of muffin tin cups.
  • Next, place sausage on top of bread cubes.
  • Sprinkle cheese on top. Pour egg mixture over and refrigerate overnight.
  • Bake at 325° for 30 minutes or until brown.
  • Serves 20.
