Ingredients
- 1 doz. eggs
- 8 slices white bread, diced
- 1 lb. loose sausage (mild)
- 1 large onion, diced
- 1 tsp. dry mustard
- 1 Tbsp. Dijon mustard
- 3 c. milk
- 2 c. Cheddar cheese, shredded
- sage, basil and oregano
Method
- Saute sausage, onion and fresh herbs.
- Mix eggs, milk and mustards.
- Place bread cubes on bottom of muffin tin cups.
- Next, place sausage on top of bread cubes.
- Sprinkle cheese on top. Pour egg mixture over and refrigerate overnight.
- Bake at 325° for 30 minutes or until brown.
- Serves 20.
