Ingredients

  • 2 c. kidney beans
  • 1 c. tomatoes or 1 can tomato soup
  • 1 qt. water
  • 1 medium onion, chopped
  • 1 bay leaf
  • 1/2 tsp. thyme
  • garlic salt
  • 1/2 tsp. All-Season salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper (if you like it hot)
  • 1 lb. sausage
  • 3 to 4 potatoes
  • 1 medium green pepper

Method

  • Mix the first 10 ingredients and simmer 1 hour.
  • Meanwhile, brown the sausage and drain. Dice the potatoes and green pepper. Add to simmering mixture and cook, uncovered, about 30 minutes or until veggies are tender.
