- 2 c. kidney beans
- 1 c. tomatoes or 1 can tomato soup
- 1 qt. water
- 1 medium onion, chopped
- 1 bay leaf
- 1/2 tsp. thyme
- garlic salt
- 1/2 tsp. All-Season salt
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper (if you like it hot)
- 1 lb. sausage
- 3 to 4 potatoes
- 1 medium green pepper
Method
- Mix the first 10 ingredients and simmer 1 hour.
- Meanwhile, brown the sausage and drain. Dice the potatoes and green pepper. Add to simmering mixture and cook, uncovered, about 30 minutes or until veggies are tender.
