Ingredients
- 4 red, yellow, or orange bell peppers
- Olive oil spray
- 3 c. cooked brown rice
- 8 oz. fully cooked spicy Italian chicken sausage links
- 4 scallions
- 2 tbsp. fresh oregano
- 2 c. marinara sauce
- 1 c. shredded mozzarella cheese
Method
- Heat oven to 400 degrees F. Place pepper halves in a large roasting pan, cut sides up, and coat with olive oil spray.
- In a large bowl, toss rice and sausage with scallions, oregano, marinara sauce, and mozzarella.
- Fill pepper cavities with mixture.
- Cover peppers with foil and bake 20 minutes until peppers are tender.
- Serve with extra marinara sauce.
- Side idea: a mixed green salad.
