Ingredients

  • 4 red, yellow, or orange bell peppers
  • Olive oil spray
  • 3 c. cooked brown rice
  • 8 oz. fully cooked spicy Italian chicken sausage links
  • 4 scallions
  • 2 tbsp. fresh oregano
  • 2 c. marinara sauce
  • 1 c. shredded mozzarella cheese

Method

  • Heat oven to 400 degrees F. Place pepper halves in a large roasting pan, cut sides up, and coat with olive oil spray.
  • In a large bowl, toss rice and sausage with scallions, oregano, marinara sauce, and mozzarella.
  • Fill pepper cavities with mixture.
  • Cover peppers with foil and bake 20 minutes until peppers are tender.
  • Serve with extra marinara sauce.
  • Side idea: a mixed green salad.
