Ingredients
- 2 (15 oz.) cans salmon
- 6 slices white bread
- 1/2 c. cornmeal
- 2 eggs
- 2 Tbsp. lemon juice
- salt
- pepper
- vegetable oil
Method
- Drain salmon; remove bones and flake. Make bread into fine crumbs in food processor. Combine all ingredients except oil. (Add a little milk if mixture seems too dry.) Form 10 to 11 patties. Pan-fry in lightly oiled skillet about 5 minutes or until lightly browned; turn halfway through cooking time. Drain on absorbent paper towels.
