Ingredients
- 1 (6 1/2 oz.) can pink salmon, drained (I use Chicken of the Sea brand)
- 2 Tbsp. mayonnaise
- 1 tsp. lemon juice
- 2 Tbsp. finely chopped celery, carrots or pepper (your choice)
- 1 Tbsp. finely chopped onions
- 1/4 tsp. salt
- dash of pepper
- 1/2 c. bread crumbs
- 1 large egg, slightly beaten
Method
- In a small bowl combine first three ingredients.
- Add next four ingredients.
- Stir in bread crumbs.
- Add egg.
- Mix well.
- Shape into loaf and place in greased 1-quart baking dish.
- (I bake mine in small greased loaf pan.)
- Bake 25 minutes in preheated 350° oven.
- Serves 2 or 3.
