Ingredients
- 3 (7 1/2 oz.) cans salmon
- 1/2 large sweet potato, grated (approximately 1 c.)
- 1 large onion, grated
- 1/2 c. plus 1 Tbsp. matzo meal
- 3 eggs, beaten
- 1/8 tsp. onion powder
- 1/8 tsp. ground pepper
- 1 generous pinch salt
- vegetable oil (for frying)
Method
- In large bowl, place salmon, drained.
- Remove bones and mash with fingers.
- Add next 7 ingredients and mix.
- In large frying pan, heat oil.
- Shape mixture into the size of small hamburgers and fry until brown on both sides.
- Remove from pan and drain on paper towels.
- Serve warm or at room temperature.
- Cooking time: Under 1 hour.
- Makes 12 patties.
