Ingredients

  • 3 (7 1/2 oz.) cans salmon
  • 1/2 large sweet potato, grated (approximately 1 c.)
  • 1 large onion, grated
  • 1/2 c. plus 1 Tbsp. matzo meal
  • 3 eggs, beaten
  • 1/8 tsp. onion powder
  • 1/8 tsp. ground pepper
  • 1 generous pinch salt
  • vegetable oil (for frying)

Method

  • In large bowl, place salmon, drained.
  • Remove bones and mash with fingers.
  • Add next 7 ingredients and mix.
  • In large frying pan, heat oil.
  • Shape mixture into the size of small hamburgers and fry until brown on both sides.
  • Remove from pan and drain on paper towels.
  • Serve warm or at room temperature.
  • Cooking time: Under 1 hour.
  • Makes 12 patties.
