Ingredients

  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 2 c. milk
  • 1/2 tsp. salt
  • dash of pepper
  • 1 (5 oz.) pkg. medium noodles
  • 1 (15 1/2 oz.) can pink salmon
  • 1 Tbsp. lemon juice
  • 2 Tbsp. parsley
  • 1 Tbsp. finely chopped onion

Method

  • In heavy saucepan, melt butter; blend in flour.
  • Gradually add milk; cook and stir until mixture is thick and smooth.
  • Season with salt and pepper.
  • Meanwhile, cook noodles as directed on package.
  • Drain salmon; sprinkle with lemon juice.
  • In buttered 1 1/2-quart casserole, alternate layers of noodles, salmon, parsley and onion and white sauce.
  • Top with buttered bread crumbs.
  • Bake about 25 minutes at 375° or until bubbly hot.
  • Makes 8 servings.
