Ingredients

  • 2 c. flour
  • 2 Large eggs
  • 1/2 c. lowfat milk (to make a med. dough)
  • Salt
  • 3 quarts. water
  • 1/2 teaspoon baking pwdr
  • 4 ounce. butter

Method

  • Mix the flour with the Large eggs, lowfat milk, salt and baking pwdr.
  • Beat till light and bubbly.
  • Set aside.
  • Bring 3 qts water to a boil with 1 Tbsp.
  • salt.
  • Drop the dough into the boiling water a teaspoonful at a time.
  • When the dumplings rise to the surface, taste one to make sure they're done.
  • When they are done, remove them with a slotted spoon and rinse lightly with cool water.
  • Heat the butter in the top of a double boiler.
  • Add in the liquid removed dumplings and mix well with two forks.
  • Keep them hot over warm water and serve separately with stew or possibly paprikash.
