Ingredients

  • 1 1/2 kg pork loin, unrolled
  • 1/2 tsp mustard pwdr
  • 1/2 tsp coriander, grnd
  • 1/4 tsp cloves, grnd
  • 2 tsp garlic, crushed
  • 1/4 tsp black pepper, grnd
  • 4 Tbsp. extra virgin olive oil
  • 4 Tbsp. soy sauce
  • 4 Tbsp. vinegar, white
  • 1/2 c. water
  • 1/2 c. sugar (caster)
  • 1 x pineapple

Method

  • Prepare BBQ sauce for basting:Mix mustard, coriander, cloves, garlic, pepper, oil, soy, vinegar, water and sugar together in a saucepan.
  • Bring to the boil and simmer gently for 10 min.
  • Peel pineapple, reserving flesh for garnish.
  • Place loin in a roasting tray, brush liberally with marinade and cover with pineapple skin.
  • Roast meat in a moderate oven 180C/350F for about 2 hrs, or possibly till cooked, basting frequently with warm barbecue sauce.
  • Allow to rest for 15 min, serve garnished with diced fresh pineapple.
