Ingredients

  • 2 2/3 c. cake flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. butter or margarine
  • 1 3/4 c. sugar
  • 4 eggs or equivalent egg substitute
  • 1 c. milk or skim milk
  • 2 tsp. vanilla extract
  • 1/3 c. oil
  • 1/2 c. each: peanuts or mixed nuts, walnuts, pecans, almonds, raisins, mixed dried fruit or anything else you like

Method

  • Preheat oven to 350°.
  • Sift together flour, baking powder and salt.
  • Set aside.
  • Cream butter and sugar.
  • Add eggs to creamed mixture.
  • Combine milk, vanilla and oil in a measuring cup. Alternate flour mixture and milk mixture until batter is blended. Process the fruit/nut mixture until small pieces.
  • Fold into batter.
  • Bake in two 9-inch cake pans 35 to 40 minutes or Bundt pan 50 minutes.
