Ingredients
- 1 C lentils
- 6 C water
- 1/4 C olive oil
- 1/4 C lemon juice
- 1 C cooked chickpeas
- 1 C chopped parsley
- 1 large red pepper, chopped
- 1 t salt
- 1/2 t pepper
Method
- Cook lentils in water until tender-firm, abt 20 min, drain, let cool.
- add to rest of ingredients.
