Ingredients

  • 3 Tbsp. olive oil
  • 2 cloves pressed garlic
  • 1/4 c. Parmesan cheese
  • 2 1/2 lb. chicken
  • 2 1/2 tsp. dried rosemary
  • 1/4 c. bread crumbs
  • 1/2 tsp. black pepper
  • red potatoes

Method

  • Preheat oven to 425°.
  • Line a baking pan with aluminum foil. In a bowl, combine oil, garlic and 1 teaspoon rosemary.
  • Using another bowl, combine bread crumbs, Parmesan cheese and 1 1/2 teaspoons rosemary.
  • Place chicken, skin side up, in pan. Sprinkle with crumb mixture.
  • Place potatoes around chicken. Drizzle oil mixture over chicken and potatoes.
  • Bake for 20 minutes.
  • Reduce temperature to 375°.
  • Bake until potatoes are tender, 40 to 45 minutes.
