Ingredients
- 3 Tbsp. olive oil
- 2 cloves pressed garlic
- 1/4 c. Parmesan cheese
- 2 1/2 lb. chicken
- 2 1/2 tsp. dried rosemary
- 1/4 c. bread crumbs
- 1/2 tsp. black pepper
- red potatoes
Method
- Preheat oven to 425°.
- Line a baking pan with aluminum foil. In a bowl, combine oil, garlic and 1 teaspoon rosemary.
- Using another bowl, combine bread crumbs, Parmesan cheese and 1 1/2 teaspoons rosemary.
- Place chicken, skin side up, in pan. Sprinkle with crumb mixture.
- Place potatoes around chicken. Drizzle oil mixture over chicken and potatoes.
- Bake for 20 minutes.
- Reduce temperature to 375°.
- Bake until potatoes are tender, 40 to 45 minutes.
