Ingredients
- 1/4 tsp. rosemary
- 1/4 tsp. thyme
- salt and pepper
- 2 c. chicken broth
- 7 to 8 lb. leg of lamb
- several pieces garlic
- 2 Tbsp. cornstarch
Method
- Make several slits in lamb.
- Place a piece of garlic in each slit.
- Rub lamb with thyme, rosemary, salt and pepper.
- Place lamb on rack in roasting pan in 325° oven.
- Roast for 1 1/2 hours for medium rare and 2 1/2 hours for medium.
