Ingredients
- about 4 lb. fresh beef brisket
- 2 onions
- 2 celery stalks
- pepper
- bay leaf
- 2 carrots
- ketchup
- chopped garlic clove
- water
Method
- Place beef fat side up in large heavy covered kettle over 1/2 of cut up vegetables.
- Spread some ketchup, generously over meat. Sprinkle with pepper and garlic clove.
- Top with rest of vegetables and 1 bay leaf.
- Add water to almost cover.
- Bring to a boil.
- Place in 325° oven for 3 or 4 hours.
- Remove meat and slice fat off top.
- Wrap in foil.
- Refrigerate overnight with heavy weight on top.
- Keeps well.
- Reheat for dinner or slice for sandwiches.
