Ingredients

  • about 4 lb. fresh beef brisket
  • 2 onions
  • 2 celery stalks
  • pepper
  • bay leaf
  • 2 carrots
  • ketchup
  • chopped garlic clove
  • water

Method

  • Place beef fat side up in large heavy covered kettle over 1/2 of cut up vegetables.
  • Spread some ketchup, generously over meat. Sprinkle with pepper and garlic clove.
  • Top with rest of vegetables and 1 bay leaf.
  • Add water to almost cover.
  • Bring to a boil.
  • Place in 325° oven for 3 or 4 hours.
  • Remove meat and slice fat off top.
  • Wrap in foil.
  • Refrigerate overnight with heavy weight on top.
  • Keeps well.
  • Reheat for dinner or slice for sandwiches.
