Ingredients

  • 2 ducklings
  • 1 c. apple juice
  • 2 Tbsp. brandy
  • 2 Tbsp. butter
  • 3 Tbsp. brown sugar
  • 1 Tbsp. cornstarch
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • 1/8 tsp. salt

Method

  • Sprinkle duckling body cavity with salt.
  • Place duckling, breast side up, on rack in shallow baking pan.
  • Prick skin all over with sharp fork or knife; truss.
  • Roast in preheated 350° oven about forty minutes per pound or until duckling is tender and a deep brown.
  • Baste with Normandy Sauce last 30 minutes of roasting time.
  • Serves 4 to 8.
