Ingredients
- 2 ducklings
- 1 c. apple juice
- 2 Tbsp. brandy
- 2 Tbsp. butter
- 3 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. nutmeg
- 1/8 tsp. ground cloves
- 1/8 tsp. salt
Method
- Sprinkle duckling body cavity with salt.
- Place duckling, breast side up, on rack in shallow baking pan.
- Prick skin all over with sharp fork or knife; truss.
- Roast in preheated 350° oven about forty minutes per pound or until duckling is tender and a deep brown.
- Baste with Normandy Sauce last 30 minutes of roasting time.
- Serves 4 to 8.
