Ingredients

  • 1/2 c. Extra virgin olive oil
  • 2 x Heads garlic, cloves peeled and minced
  • 1 x Onion, minced
  • 1/2 c. Flour
  • 1 tsp Paprika
  • 1/8 tsp Cayenne pepper
  • 1 tsp White pepper
  • 1/2 tsp Thyme
  • 6 c. Chicken broth
  • 1/2 x Lemon , juice of
  • 1/8 c. Minced cilantro Croutons

Method

  • 6 Servings.
  • Each Serving without croutons
  • 1.
  • Heat oil over medium heat in 3-qt saucepan.
  • Add in garlic and onion and saute/fry till barely browned, about 3 min.
  • 2.
  • Add in flour, paprika, cayenne, white pepper and thyme, and cook , stirring constantly, 3 min.
  • 3.
  • Add in chicken broth and bring to boil over medium high heat, stirring often.
  • Reduce heat to low.
  • 4.
  • Using wand process till smooth.
  • 5.
  • Add in lemon juice and cilantro and stir well.
  • Simmer on blech.
  • Serve with croutons.
