Ingredients
- 1 c. Ricotta cheese
- 1 c. shredded Cheddar cheese
- 8 small flour tortillas
Method
- Combine cheeses in a bowl.
- Divide mixture evenly between 4 tortillas.
- Top with remaining tortillas.
- Preheat oven to 300°. Heat nonstick skillet over medium heat and cook until lightly browned on both sides, 1 to 2 minutes.
- Transfer to cookie sheet and keep warm in oven.
- Repeat with remaining Quesadillas.
- Cut into quarters before serving.
