Ingredients
- 2 1/2 cups chicken stock
- 1 cup long-grain rice
- 1 tablespoon butter
- 1 teaspoon salt
- 1 small onion, chopped
- 1/2 lb fresh broccoli, coarsely chopped
- 3 tomatoes, chopped
- ground black pepper, to taste
Method
- In a saucepan, bring the stock to a boil.
- Stir in the rice, butter, salt, onion and broccoli.
- Reduce the heat to medium and cook until the stock is absorbed, about 20 minutes.
- Stir in the tomatoes and pepper to taste.
