Ingredients

  • 2 c. brown rice, cooked
  • 2 c. cooked black beans
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 1/2 c. canned chilies, chopped
  • 1/2 lb. Jack cheese, shredded
  • 1/2 lb. Ricotta cheese, thinned slightly with milk
  • 1/2 c. Cheddar cheese, grated

Method

  • Preheat oven to 350°. Mix rice, beans, garlic, onion and chilies.
  • Layer this mixture alternately in a greased casserole with Jack and Ricotta cheese, ending with rice mixture.
  • Bake for 30 minutes.
  • During last few minutes of baking, sprinkle grated Cheddar cheese over top.
  • Serves 6 to 8.
