Ingredients

  • 1 1/2 c. cooked rice
  • 2/3 c. mayonnaise
  • 2 Tbsp. finely chopped onion
  • 1/2 c. diced, cooked ham
  • 1/2 c. cooked frozen English peas
  • 1/2 c. cooked frozen lima beans
  • 1/2 c. cooked carrots (until crispy)
  • pickle relish
  • pimentos
  • 1 Tbsp. mustard or less
  • 1/2 tsp. curry powder (optional)

Method

  • While rice is hot, add mayonnaise and onion.
  • Mix well and chill, then you can add any of the following (whatever you like!): ham, peas, lima beans, carrots, pickle relish, pimentos, mustard and curry powder.
  • The amount of vegetables you add can be adjusted to your taste.
  • I also seasoned with black pepper.
  • Celery can also be added.
