Ingredients
- 1 1/2 c. cooked rice
- 2/3 c. mayonnaise
- 2 Tbsp. finely chopped onion
- 1/2 c. diced, cooked ham
- 1/2 c. cooked frozen English peas
- 1/2 c. cooked frozen lima beans
- 1/2 c. cooked carrots (until crispy)
- pickle relish
- pimentos
- 1 Tbsp. mustard or less
- 1/2 tsp. curry powder (optional)
Method
- While rice is hot, add mayonnaise and onion.
- Mix well and chill, then you can add any of the following (whatever you like!): ham, peas, lima beans, carrots, pickle relish, pimentos, mustard and curry powder.
- The amount of vegetables you add can be adjusted to your taste.
- I also seasoned with black pepper.
- Celery can also be added.
