Ingredients
- 2 c. rice, cooked
- 2 1/2 c. milk
- 1/2 stick butter
- 3/4 c. sugar
- 1/8 tsp. salt
- 3 eggs
- nutmeg
- 1 tsp. vanilla flavoring
Method
- Heat milk and butter (can be heated in microwave).
- Mix sugar, salt and eggs.
- Add 1/2 cup of hot milk to mixture.
- Blend well. Add to hot milk.
- Cook in microwave on Low heat; stir often, until it begins to thicken.
- Remove and add rice and sprinkle with nutmeg.
- Bake in 300° oven until it sets.
- Best served warm.
- Add flavoring to custard after taking out of microwave.
