Ingredients

  • 2 c. rice, cooked
  • 2 1/2 c. milk
  • 1/2 stick butter
  • 3/4 c. sugar
  • 1/8 tsp. salt
  • 3 eggs
  • nutmeg
  • 1 tsp. vanilla flavoring

Method

  • Heat milk and butter (can be heated in microwave).
  • Mix sugar, salt and eggs.
  • Add 1/2 cup of hot milk to mixture.
  • Blend well. Add to hot milk.
  • Cook in microwave on Low heat; stir often, until it begins to thicken.
  • Remove and add rice and sprinkle with nutmeg.
  • Bake in 300° oven until it sets.
  • Best served warm.
  • Add flavoring to custard after taking out of microwave.
