Ingredients
- 3 Tbsp. butter or margarine, melted
- 1/2 c. sugar
- red food coloring
- 1 lb. rhubarb, finely diced
- 1 pkg. Jiffy white cake mix
Method
- Combine melted butter, sugar and a few drops of red food coloring.
- Add rhubarb; toss lightly.
- Spread in 8-inch square cake pan.
- Prepare cake mix according to package directions.
- Pour over fruit.
- Bake at 375° for about 35 minutes.
- Remove cake from oven; invert.
- Let syrup drain onto cake 5 minutes before removing cake pan.
