Ingredients
- 4 c. diced rhubarb
- 1 c. sugar or equivalent in honey
- 1/2 pkg. strawberry Jell-O (3 Tbsp.)
- 1 pkg. Jiffy cake mix (white)
- 1 c. boiling water
- 2 to 3 Tbsp. melted margarine
Method
- Spread diced rhubarb evenly in bottom of a 7 x 11-inch pan. Sprinkle 1 cup of sugar and Jell-O powder over the top, then the Jiffy cake mix.
- Pour the hot water over the contents and drizzle the margarine.
- Bake for 1 hour in 350° oven.
- May be served with whipped cream or ice cream.
