- 1 c. flour
- 3/4 c. oatmeal
- 1 c. brown sugar
- 1 tsp. cinnamon
- 1/2 c. melted butter or margarine
- 1 (9-inch) pastry
- 4 c. rhubarb
- 1 c. sugar
- 2 Tbsp. cornstarch
- 1 c. cold water
- 1 tsp. vanilla
- red food coloring (optional)
Method
- Mix together flour, oatmeal, brown sugar, cinnamon and butter until crumbly.
- Put 1/2 of the crumb mixture into pastry lined 9-inch pan, reserving 1/2 of crumb mixture to put on top.
- Cover with rhubarb.
