Ingredients
- 2 cups diced rhubarb
- 3/4 cup diced apple
- 1/2 cup dried cranberries
- 1/4 cup finely chopped onion
- 1 Tbsp grated orange peel
- 1/4 cup water
- 2 Tbsp honey
- 1 Tbsp minced ginger
- 1 teasp red-wine vinegar
- 1 teasp orange juice
- 1/4 teasp crushed red pepper
Method
- Combine all ingredients in a saucepan, bring to a boil, stirring occassionally. Reduce heat to low, cover and simmer until tender, 3-6 minutes or more. Uncover and cook until thickened. Serve warm or cold.
