Ingredients

  • 2 Eggplant
  • 4 Okra
  • 50 ml Vinegar
  • 1 tbsp Kombu based mentsuyu
  • 1 tbsp Sesame oil
  • 1 tbsp Sugar
  • 1 tbsp Juice from grating the ginger
  • 1 Oil for deep frying

Method

  • Cut the eggplants in half lengthwise.
  • Cut 2-3 diagonal notches into the skin.
  • Cut a 1 cm notch into the okra.
  • Using the oil for deep-frying, fry the eggplants starting from the skin side until slightly browned.
  • Also deep-fry the okra.
  • Dish up the okra and eggplants.
  • Serve with the sauce mixture that you've mixed together.
