Ingredients

  • 2 c. rice, cooked
  • 2 medium bell peppers
  • 2 medium onions
  • 4 strips bacon, fried crisp
  • 1 can tomatoes
  • 1 c. tomato sauce
  • 1/2 tsp. Parmesan cheese
  • salt and pepper to taste

Method

  • Fry bacon and place on paper towel.
  • Brown onions and peppers in drippings.
  • Add tomatoes, sauce and bacon to the rice.
  • Pour in greased casserole.
  • Sprinkle top with Parmesan cheese and bake at 325° for 30 minutes or until rice is dry enough to separate.
  • May add 1 pound cooked shrimp, 1 cup cooked sausage, pork or ham.
