Ingredients
- 2 c. rice, cooked
- 2 medium bell peppers
- 2 medium onions
- 4 strips bacon, fried crisp
- 1 can tomatoes
- 1 c. tomato sauce
- 1/2 tsp. Parmesan cheese
- salt and pepper to taste
Method
- Fry bacon and place on paper towel.
- Brown onions and peppers in drippings.
- Add tomatoes, sauce and bacon to the rice.
- Pour in greased casserole.
- Sprinkle top with Parmesan cheese and bake at 325° for 30 minutes or until rice is dry enough to separate.
- May add 1 pound cooked shrimp, 1 cup cooked sausage, pork or ham.
