Ingredients
- 1 pound Red Lentils
- 7 cups Water (filtered Or Bottled), Salted
- 1 bunch Cilantro
- 4 cloves Garlic, Chopped
- 4 Tablespoons Extra Virgin Olive Oil
- 6 Tablespoons Fresh Squeezed Lemon Juice
- 2 teaspoons Salt
Method
- 1. Rinse lentils in a colander, making sure to remove any sand or small stones.
- 2. In a large soup pot, boil lentils in the salted water, until tender.
- 3. In the meantime, in a large skillet, saute cilantro and garlic in olive oil. Add to lentils.
- 4. Add lemon and salt to taste and let simmer for about 20 minutes.
- 5. Enjoy!
