Ingredients

  • 3/4 c. minced fresh parsley
  • 1/4 c. minced fresh basil
  • 2 tbsp. minced green scallion tops
  • 1/4 c. extra virgin olive oil (approx.)
  • 3 c. cooked long grain rice, heated
  • Salt and fresh grnd pepper to taste
  • 1 tbsp. unsalted butter
  • Freshly grated Parmesan cheese, for garnish

Method

  • Put parsley, basil and onion tops in food processor.
  • With machine running, add in just sufficient oil through food tube to make a smooth puree.
  • Toss pureed mix into warm rice with salt, pepper and butter.
  • Serve immediately or possibly keep hot in 225 degree F. oven.
  • Sprinkle with cheese before serving.
  • Serves 4.
