Ingredients
- 2 c. red lentils, rinsed well
- 4 c. water
- 1 large onion, diced
- 1 c. chopped mushrooms
- 1/2 c. walnuts, finely chopped
- 4 Tbsp. miso
- 2 Tbsp. tahini
- 3 Tbsp. minced scallions or chives
- 2 Tbsp. tamari
Method
- Bring water to boil, add lentils and cook 10 minutes.
- Add onion and mushrooms, lower heat and cook 10 minutes.
- Add rest of ingredients, blend well and simmer for 5 to 10 minutes.
- Serve on rice cakes, pita bread, tortillas or dip into vegetables.
- Add more water as needed and cooking time may vary.
- Lentils should be soft enough to serve as dip.
- Makes 4 to 5 servings.
