Ingredients

  • 2 c. red lentils, rinsed well
  • 4 c. water
  • 1 large onion, diced
  • 1 c. chopped mushrooms
  • 1/2 c. walnuts, finely chopped
  • 4 Tbsp. miso
  • 2 Tbsp. tahini
  • 3 Tbsp. minced scallions or chives
  • 2 Tbsp. tamari

Method

  • Bring water to boil, add lentils and cook 10 minutes.
  • Add onion and mushrooms, lower heat and cook 10 minutes.
  • Add rest of ingredients, blend well and simmer for 5 to 10 minutes.
  • Serve on rice cakes, pita bread, tortillas or dip into vegetables.
  • Add more water as needed and cooking time may vary.
  • Lentils should be soft enough to serve as dip.
  • Makes 4 to 5 servings.
