Ingredients
- 1 lb. smoked sausage, sliced into 1/2-inch slices
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 clove garlic, minced
- 2 large cans red kidney beans, drained
- 1 (16 oz.) can stewed tomatoes
- 1/2 tsp. dried oregano
- 1/2 tsp. pepper
- hot cooked rice
Method
- Cook sausage over low heat.
- Add onion, green pepper and garlic. Saute until tender. Add red beans, tomatoes and seasonings. Simmer for 20 minutes.
- Serve over hot rice.
- Great served with corn bread.
