- 1 thick slice ham, cubed
- 1 clove garlic, minced
- 1 c. chopped onion
- 4 Tbsp. butter
- 2 (16 oz.) cans tomatoes, diced
- 1 (10 oz.) can beef bouillon
- 1 c. rice
- 1 tsp. sugar
- 3/4 tsp. thyme
- 1/2 tsp. chili powder
- 1 bay leaf, crushed
- 1/2 tsp. pepper
- 2 lb. raw shrimp
- 1 can pitted black olives, drained
- 1 or 2 green peppers, diced
Method
- In large skillet, cook ham, garlic and onion in butter until onion is transparent.
- Add tomatoes, bouillon, rice, sugar and all spices.
- Cover and cook until rice is tender (15 to 20 minutes). Add shrimp, olives and peppers.
- Simmer about 5 to 10 minutes to desired thickness.
- Serves 8 to 10.
