Ingredients
- 1 lb. red beans (such as pinto)
- 1 lb. ground beef
- 2 Tbsp. oil
- 1 medium onion, chopped
- 1 envelope Chili-O mix
- 1 clove crushed garlic
- 1/2 tsp. dried basil
- 1 Tbsp. chili powder
- 1 (8 oz.) can tomato sauce
- 1 (1 lb.) can tomatoes with liquid
- 6 c. cooked rice
Method
- Wash and pick over beans.
- Place in large pot.
- Cover with water; bring to a boil.
- Boil for 2 minutes.
- Cover.
- Turn off heat; let stand 1 hour.
- Simmer for 1 or 2 hours, until beans are half cooked.
- Brown the meat in oil with onion in a large skillet. Add Chili-O mix, garlic, chili powder and basil; mix well.
- Stir in tomato sauce and tomatoes.
- Cover; allow this to stand for a few hours.
- Heat through with the rice when ready to serve.
- Makes 10 to 12 servings.
