Ingredients

  • 1 lb. red beans (such as pinto)
  • 1 lb. ground beef
  • 2 Tbsp. oil
  • 1 medium onion, chopped
  • 1 envelope Chili-O mix
  • 1 clove crushed garlic
  • 1/2 tsp. dried basil
  • 1 Tbsp. chili powder
  • 1 (8 oz.) can tomato sauce
  • 1 (1 lb.) can tomatoes with liquid
  • 6 c. cooked rice

Method

  • Wash and pick over beans.
  • Place in large pot.
  • Cover with water; bring to a boil.
  • Boil for 2 minutes.
  • Cover.
  • Turn off heat; let stand 1 hour.
  • Simmer for 1 or 2 hours, until beans are half cooked.
  • Brown the meat in oil with onion in a large skillet. Add Chili-O mix, garlic, chili powder and basil; mix well.
  • Stir in tomato sauce and tomatoes.
  • Cover; allow this to stand for a few hours.
  • Heat through with the rice when ready to serve.
  • Makes 10 to 12 servings.
