Ingredients
- 1 lb. pork sausage
- 1 large onion, chopped
- 3/4 c. celery (optional)
- 3/4 c. bell pepper
- 1/4 tsp. each red, white and black pepper
- 1/2 tsp. cumin
- 1 bay leaf
- 1/4 tsp. marjoram
- 1/4 tsp. salt
- hot peppers to taste
- 1 lb. red beans
Method
- Cook red beans until half done. Brown sausage and onion.
- Add remaining ingredients to beans and simmer until done.
- Serve over cooked rice.
