Ingredients

  • 3 c. diced apples, peeled
  • 1/2 c. vegetable oil
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 1/2 c. sifted flour
  • 1 c. chopped nuts
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • vanilla

Method

  • Preheat oven to 350°.
  • Peel and dice apples; set aside.
  • Pour oil in bowl and add sugar and eggs. Beat well.
  • Mix dry ingredients and gradually add to the creamed mixture.
  • Fold in apples and nuts.
  • Bake in oblong cake pan or tube pan for about 1 hour.
  • Test with a straw.
  • This is a good, moist cake and does not require icing unless desired.
