Ingredients
- 3 c. diced apples, peeled
- 1/2 c. vegetable oil
- 1 1/2 c. sugar
- 3 eggs
- 2 1/2 c. sifted flour
- 1 c. chopped nuts
- 1/2 tsp. salt
- 1 tsp. soda
- 2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- vanilla
Method
- Preheat oven to 350°.
- Peel and dice apples; set aside.
- Pour oil in bowl and add sugar and eggs. Beat well.
- Mix dry ingredients and gradually add to the creamed mixture.
- Fold in apples and nuts.
- Bake in oblong cake pan or tube pan for about 1 hour.
- Test with a straw.
- This is a good, moist cake and does not require icing unless desired.
