Ingredients
- 4 oz. almonds, sliced
- 2 c. flour
- 3/4 tsp. cinnamon
- 1/4 tsp. salt
- 1 egg, separated
- 1 c. sugar
- 1/4 c. light brown sugar
- 1 tsp. vanilla
- 1 c. unsalted butter
- 2/3 c. raspberry preserves
Method
- Combine flour, cinnamon and salt.
- Add butter, sugars, vanilla and egg yolk.
- Press dough into sheet pan.
- Spread preserves evenly over top.
- Lightly beat egg white and brush lightly over top.
- Sprinkle with nuts, pressing gently.
- Bake at 300° until edges are brown and center is firm (30 to 35 minutes).
- Remove from oven.
- Loosen sides with spatula immediately.
- Cut in squares.
