Ingredients

  • 4 oz. almonds, sliced
  • 2 c. flour
  • 3/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 egg, separated
  • 1 c. sugar
  • 1/4 c. light brown sugar
  • 1 tsp. vanilla
  • 1 c. unsalted butter
  • 2/3 c. raspberry preserves

Method

  • Combine flour, cinnamon and salt.
  • Add butter, sugars, vanilla and egg yolk.
  • Press dough into sheet pan.
  • Spread preserves evenly over top.
  • Lightly beat egg white and brush lightly over top.
  • Sprinkle with nuts, pressing gently.
  • Bake at 300° until edges are brown and center is firm (30 to 35 minutes).
  • Remove from oven.
  • Loosen sides with spatula immediately.
  • Cut in squares.
