Ingredients

  • 1/2 c. shortening
  • 1 c. white sugar
  • 2 eggs
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 2 c. oatmeal
  • 2 c. flaked coconut or chopped nuts, raisins, chocolate or butterscotch chips (or any combination to total 2 c.)
  • 1 c. Rice Krispies or Wheaties
  • 1/2 c. butter
  • 1 c. brown sugar
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. salt

Method

  • Cream shortening, butter and both sugars until light and fluffy.
  • Beat in eggs and vanilla.
  • Stir together the flour, baking powder, baking soda and salt in a bowl, then beat into the creamed mixture.
  • Stir in oatmeal, coconut and cereal.
  • Drop by heaping teaspoonfuls on cookie sheets, leaving 2-inches between cookies. Bake at 375° for 10 to 12 minutes, until browned as preferred.
  • Let the cookies cool 1 minute on the sheets before removing to racks to cool.
  • Makes about 6 dozen.
