- 1/2 c. shortening
- 1 c. white sugar
- 2 eggs
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 2 c. oatmeal
- 2 c. flaked coconut or chopped nuts, raisins, chocolate or butterscotch chips (or any combination to total 2 c.)
- 1 c. Rice Krispies or Wheaties
- 1/2 c. butter
- 1 c. brown sugar
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. salt
Method
- Cream shortening, butter and both sugars until light and fluffy.
- Beat in eggs and vanilla.
- Stir together the flour, baking powder, baking soda and salt in a bowl, then beat into the creamed mixture.
- Stir in oatmeal, coconut and cereal.
- Drop by heaping teaspoonfuls on cookie sheets, leaving 2-inches between cookies. Bake at 375° for 10 to 12 minutes, until browned as preferred.
- Let the cookies cool 1 minute on the sheets before removing to racks to cool.
- Makes about 6 dozen.
