Ingredients
- 2 cups whole grain cereal flakes with raisins, dates and pecans, divided
- 1/2 cup (1 stick) butter or margarine, melted, divided
- 3/4 cup sugar, divided
- 1-1/3 cups milk
- 1 egg
- 2 cups flour
- 1 Tbsp. CALUMET Baking Powder
- 1/2 tsp. ground cinnamon
Method
- Preheat oven to 350F.
- Mix 1/2 cup of the cereal, 2 Tbsp.
- of the butter and 1 Tbsp.
- of the sugar until well blended; set aside.
- Mix remaining 1-1/2 cups cereal, remaining butter and the milk in medium bowl.
- Let stand 5 minutes.
- Add egg and remaining sugar; mix well.
- Stir in flour, baking powder and cinnamon just until blended.
- Spread into 8x4-inch loaf pan sprayed with cooking spray.
- Sprinkle with the reserved cereal mixture; press gently into batter.
- Bake 55 minutes to 1 hour or until toothpick inserted in center comes out clean.
- Cool 10 minutes in pan on wire rack; remove from pan.
- Cool completely.
- Cut into 16 slices to serve.
