Ingredients

  • 2 cups whole grain cereal flakes with raisins, dates and pecans, divided
  • 1/2 cup (1 stick) butter or margarine, melted, divided
  • 3/4 cup sugar, divided
  • 1-1/3 cups milk
  • 1 egg
  • 2 cups flour
  • 1 Tbsp. CALUMET Baking Powder
  • 1/2 tsp. ground cinnamon

Method

  • Preheat oven to 350F.
  • Mix 1/2 cup of the cereal, 2 Tbsp.
  • of the butter and 1 Tbsp.
  • of the sugar until well blended; set aside.
  • Mix remaining 1-1/2 cups cereal, remaining butter and the milk in medium bowl.
  • Let stand 5 minutes.
  • Add egg and remaining sugar; mix well.
  • Stir in flour, baking powder and cinnamon just until blended.
  • Spread into 8x4-inch loaf pan sprayed with cooking spray.
  • Sprinkle with the reserved cereal mixture; press gently into batter.
  • Bake 55 minutes to 1 hour or until toothpick inserted in center comes out clean.
  • Cool 10 minutes in pan on wire rack; remove from pan.
  • Cool completely.
  • Cut into 16 slices to serve.
