Ingredients

  • 1 c. raisins
  • 2 c. water
  • 1 tsp. soda
  • 2 rounded Tbsp. shortening
  • 1 c. sugar
  • 2 c. flour
  • 1 tsp. baking powder
  • pinch of salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Method

  • Boil raisins and water down to 1 cup of juice.
  • Pour juice in a bowl; add soda.
  • Cool slightly and add shortening and sugar to the warm liquid.
  • Then add flour, baking powder and raisins. (Nuts can be added.)
  • Bake in well-greased loaf pan at 350° for 40 minutes.
  • Can be served plain or with a brown sauce.
