Ingredients
- 3 slices lean bacon
- 3 c. cheese (variety), shredded
- 1 c. half and half milk
- 1 medium onion, diced
- 4 large eggs
- 1 prepared pie crust
Method
- Saute bacon until crispy.
- Drain and reserve 1 teaspoon bacon fat to saute the diced onion in until transparent.
- In blender jar, mix eggs on highest speed until fluffy.
- Add half and half and blend until frothy.
- In pie crust, layer onion, half of the crumbled bacon, cheese, egg mixture and remaining bacon.
- Bake in preheated oven at 350° for 1 hour or until almost set.
- Quiche will thicken more as it cools.
- Can be used for an appetizer, brunch or a light lunch.
