Ingredients

  • 3 slices lean bacon
  • 3 c. cheese (variety), shredded
  • 1 c. half and half milk
  • 1 medium onion, diced
  • 4 large eggs
  • 1 prepared pie crust

Method

  • Saute bacon until crispy.
  • Drain and reserve 1 teaspoon bacon fat to saute the diced onion in until transparent.
  • In blender jar, mix eggs on highest speed until fluffy.
  • Add half and half and blend until frothy.
  • In pie crust, layer onion, half of the crumbled bacon, cheese, egg mixture and remaining bacon.
  • Bake in preheated oven at 350° for 1 hour or until almost set.
  • Quiche will thicken more as it cools.
  • Can be used for an appetizer, brunch or a light lunch.
