Ingredients

  • 2 c. flour
  • 2/3 c. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. milk
  • 1/3 c. butter, melted
  • 1 tsp. ground nutmeg
  • 1 tsp. vanilla
  • 2 c. fresh or frozen blueberries

Method

  • In a mixing bowl, combine flour, sugar, baking powder and salt.
  • In another bowl, beat eggs.
  • Blend in milk, butter, nutmeg and vanilla; pour into dry ingredients and mix just until moist. Fold in blueberries.
  • Fill muffin cups 2/3 full.
  • Bake at 375° for 20 to 25 minutes.
  • Brush tops with melted butter and sprinkle with sugar.
  • Makes 1 dozen.
