- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1 1/2 c. quick cooking rice
- 1 1/4 c. water
- 1 small can sliced water chestnuts
- 2 c. cooked, diced chicken
- 3 cloves garlic, minced
- 3 Tbsp. soy sauce
- 1 c. sliced mushrooms
- 1/2 c. orange juice
- 2 c. broccoli florets
Method
- Combine onion, garlic, soy sauce and oil.
- Cook 1 minute. Stir in rice, orange juice, water and water chestnuts.
- Microwave on High for 5 minutes.
- Stir in broccoli and mushrooms.
- Add chicken.
- Let stand 5 minutes.
