Ingredients

  • 2 c. self-rising flour
  • 3 eggs
  • 1 1/4 c. sugar
  • 3 very ripe bananas, mashed
  • 1/2 c. chopped pecans
  • 1 Tbsp. oil

Method

  • Cream sugar, oil and eggs.
  • Beat well.
  • Add bananas. Gradually add flour.
  • Fold in nuts.
  • Pour into cleaned and oiled cans that you have emptied of their contents.
  • Pour about 3/4 full and bake in a 350° oven for about 45 to 50 minutes.
  • You can check these along (some ovens cook faster and the diameter of the cans make a difference).
  • To remove, just cut the bottom out of the can and push gently.
  • Enjoy with a dollop of sweet whipped cream.
