Ingredients
- 2 c. self-rising flour
- 3 eggs
- 1 1/4 c. sugar
- 3 very ripe bananas, mashed
- 1/2 c. chopped pecans
- 1 Tbsp. oil
Method
- Cream sugar, oil and eggs.
- Beat well.
- Add bananas. Gradually add flour.
- Fold in nuts.
- Pour into cleaned and oiled cans that you have emptied of their contents.
- Pour about 3/4 full and bake in a 350° oven for about 45 to 50 minutes.
- You can check these along (some ovens cook faster and the diameter of the cans make a difference).
- To remove, just cut the bottom out of the can and push gently.
- Enjoy with a dollop of sweet whipped cream.
