Ingredients

  • Pet-Ritz pie shells
  • 1/2 pt. heavy whipping cream
  • 1/2 pt. half and half
  • 1/2 c. crisp cooked bacon
  • 1/2 c. grated Swiss cheese
  • 3 eggs, beaten
  • 1/3 tsp. dry mustard
  • 1/2 c. minced onion
  • dash of nutmeg
  • salt and pepper to taste

Method

  • Prebake pie shells until very lightly brown.
  • Crumble cooked bacon in bottom of pie; layer cheese over bacon.
  • Beat eggs, spices, cream, half and half and onion with mixer 2 to
  • 3 minutes. Pour over bacon and cheese.
  • Bake at 350° for 30 to 40 minutes. Check closely during last 10 minutes.
  • Done when inserted knife comes out clean.
  • Do not overcook.
  • Makes 1 pie; double recipe makes 3.
