Ingredients

  • 2/3 c. semi-sweet chocolate morsels
  • 2 Tbsp. dark rum
  • 3 eggs, separated
  • 1/4 tsp. cream of tartar
  • dash of salt
  • 2 Tbsp. sugar
  • 1/2 c. butter, softened
  • 2/3 c. sugar
  • 1/3 c. ground almonds
  • 1/4 tsp. almond extract
  • 3/4 c. sifted cake flour
  • Chocolate Butter Frosting
  • 1/3 c. sliced almonds, toasted

Method

  • Place chocolate morsels in top of a double boiler; bring water to a boil.
  • Reduce heat to low; cook, stirring occasionally, until chocolate melts.
  • Remove from hot water; let cool completely. Stir in rum.
  • Combine egg whites, cream of tartar and salt in a small mixing bowl; beat at medium speed of an electric mixer until foamy.
  • Add 2 tablespoons sugar, 1 tablespoon at a time, beating at high speed until stiff peaks form.
  • Cover; set aside.
